Agustín Ariño is Professor of Food Science and Food Safety at the University of Zaragoza (Spain) since 2010. He earned his degree in Veterinary Medicine in 1985 and his PhD in 1991, with research on persistent chlorinated contaminants in food. He completed a one-year postdoctoral fellowship at the University of Nebraska-Lincoln (USA), where he specialized in molds and mycotoxins. Since 2012, he has been the principal investigator (PI) of the reference group "Analysis and Evaluation of Food Safety (AESA)." He is also a member of the MICOFOOD National Network of Excellence, dedicated to research on molds and mycotoxins in the food chain and their decontamination processes. Dr. Ariño is a member of the Agri-Food Institute of Aragon (IA2).

Throughout her scientific career, she has primarily worked in the following research areas:
(1) Chemical risk assessment in the food chain: mycotoxins, chlorinated contaminants, pesticide and veterinary drug residues, risk prevention and reduction strategies in the food chain, and detection and control techniques.
(2) Biological risk assessment in the food chain: pathogenic microorganisms (Listeria, Salmonella, etc.), antibiotic resistance, and strategies for the prevention and elimination of pathogenic microorganisms (One Health approach).
(3) Food quality and safety: analysis of physicochemical, microbiological, and sensory parameters to determine food quality and safety, as well as the study of bioactive compounds and packaging methods to extend shelf life.

In the role of principal researcher, Dr. Ariño's group has obtained funding from several competitive projects (National R+D Program, European Union, Regional grants), as well as from several research contracts with companies for the technological transfer to the productive sector. Dr. Ariño’s experience in food quality and safety includes working with regulators and food industry and providing expert advice on technical matters, such as research needs and emerging issues. He has mentored many graduate students, hosted and trained visiting scientists from within and outside Spain, and supervised 11 Ph.D. theses.

Dr. Ariño has authored or co-authored 84 SCI-JCR papers (56% in first quartile Q1), as well as 12 international book chapters. The current h-index is 31. He has been awarded the 5 CNEAI six-years research periods that he has applied for, the last one granted in 2020 (period 2014-2019). In summary, Dr. Ariño has been dedicated to the study of contaminants in the food chain, the advanced analytical techniques for detection and the procedures for their prevention and reduction. He has experience in the use of various analytical techniques, especially chromatographic, which have been applied in the field of food science and food safety, obtaining relevant results disseminated in international journals of high impact, as well as in national and international Congresses.

Regarding university management, Dr. Ariño has served as Secretary of Department, Vice-Dean and Member in various commissions and expert teams (ANEP, ANECA, WHO, EAEVE, Erasmus...). Furthermore, Professor Ariño has participated in numerous science outreach activities, such as the FECYT projects “Feeding Vocations” (8 editions) and “Food Champions” (2 editions). Dr. Ariño has a close working relationship with some international research groups and he is currently a substitute member of EFSA's emerging risks network EREN.
