Dr. Guillermo Cebrián Auré holds a degree in Veterinary science (2003) and joined the Department of Animal Production and Food Science (Food Technology Group), in the University of Zaragoza (Spain) in 2002 as he won a Fellowship supported by the Spanish Government for 1 academic year to work in a research project. In 2004, he also won a Fellowship to complete a PhD Thesis also supported by the Spanish Government. As a member of the Food Technology Group, Dr. Guillermo Cebrián Auré has acquired considerable experience on a wide variety of experimental techniques as well as theoretical and computing knowledge.
His PhD lasted until July 2009 and was entitled “Mechanisms of inactivation and resistance of Staphylococcus aureus to different technologies for food preservation” Part of this research work was accomplished in 2006 in one well known research centre in Europe (Laboratory of Food Microbiology of the Katholieke Universiteit Leuven (Leuven, Belgium)) supervised by renowned scientists in their field (Prof. Chris Michiels and Dr. Abraham Aertsen). This allowed him to obtain his PhD title with a European Mention.
After obtaining his PhD Dr. Guillermo Cebrián Auré continued working in the Food Technology Group of the University of Zaragoza involved in various European and National Projects. During this period he also completed a second internship at the Microbial Ecology Platform of the Institute of Food Research. Since March 2011 until august 2015 he worked as an investigator at the R&D department of ZEU-LAB, a biotechnology company located in Zaragoza (Spain). His work was focused on the development of a new line of products for the detection of pathogens and allergens in foods. This has helped him to acquire considerable expertise on biochemistry (protein purification) and Immunochemistry but also has given him a unique perspective on the research requirements of the industry. He continued closely collaborating with the “New Technologies for Food Preservation Group” of the University of Zaragoza in a number of projects aiming to get insight into the mechanisms of microbial resistance/adaptation to traditional and new technologies for food preservation.
In September 2015 he rejoined the “New Technologies for Food Preservation Group” working in the European (H2020) project ECOPROLIVE, aiming to improve olive oil production by different means, among them by introducing Pulsed Electric Fields within the production process. Since October 2016 he is Assistant Professor (non-tenure) at the University of Zaragoza
These experiences have given Dr. Guillermo Cebrián Auré the opportunity to possess a solid knowledge of microbial physiology, microbial stress responses and food preservation technologies. He also has worked with a wide variety of basic and specialised experimental techniques, including genetic, biochemical and immuno-chemical techniques.
During his scientific career, Dr. Guillermo Cebrián Auré has published 35 articles in peer-reviewed journals (+ another one submitted), 4 book chapters, and has presented his research in more than 20 National and International Conferences.
